Our Ciders and Perries
New Season Porker is a young medium cider naturally made using three varieties of apple grown within sight of Ely Cathedral.
You can't enjoy it like this for long - A fast fermentation captures the natural flavours and aromas of the fruit giving a fresh young appley cider. In the New Year, New Season Porker will change; we must then wait for the illusive malolactic fermentation in the Spring to give us Porker´s Snout, a more mature cider.
Porker´s Snout is a medium cider naturally made without any chemical additives using five varieties of apple all grown within sight of Ely Cathedral. A slow and cool fermentation retains the natural flavours and aromas of the fruit giving a rich appley cider. Soft tannins and just a little natural acidity make Porker´s Snout a cider for both beginners and seasoned cider drinkers to enjoy.
Old Spot is a traditional medium dry farmhouse cider. It is naturally made, without the use of any chemical additives, from three varieties of apple all grown in the Fenlands. A fast initial fermentation gives the cider its firm, tannic and mildly acidic taste. Old Spot is generally preferred by seasoned cider drinkers.
Sweet Little Pig is a fruity sweet cider with a full flavour of whole apples provided by a high proportion of Cox apples in the blend. We don't make this cider often so enjoy it cool for a refreshing summer treat. Like all our ciders' Sweet Little Pig is naturally made without any chemical additives.
Rum Cask is made in autumn each year using two varieties of locally grown desert apples . The juice from a few Lord Lambourne or Bramley cooking apples is added to balance acidity and give body to the cider. It is fermented slowly and stored in an oak barrel that has been used to age and import Rum from the Caribbean. Nothing except a little brown sugar is added and nothing taken away.
Single Variety Ciders occasionally we make ciders using single varieties of apple such as Katy, Worcester and Discovery. We only make these ciders in years when the fruit is really good. Please check with us for availability.
Gareth's Perry First made in autumn 2008 and so called because our friend Gareth pressed the over ripe Cambridgeshire pears all by hand! It has since become a real favourite. Fermented slowly it gives a fruity perry with a strong pear character.
Jewels Perry is made using a mixture of traditional perry pears grown in Herefordshire. Our supplier's trees are ancient; some perhaps 150 years old. They grow in grass meadows giving lovely low nutrient fruit the juice of which ferments slowly to make a fine perry.
